Mexican Style Chicken 3T veg. oil 2 1/2-3 1/2lb broiler fryer chicken, cut up 1/2c flour 28oz can whole tomatoes 1 med. onion chopped (1/2c) 1 1/2t salt 1 1/2t-2t chili powder 1/8t minced garlic 1/8t pepper dash cayenne 2 chicken bouillon cubes 2 1/2c boiling water 1c uncooked regular rice 8oz whole kernel corn 8oz kidney beans Heat oil in 10" skillet. Coat chicken with flour. Cook in hot oil over med. heat till brown, 15-20 minutes, drain. Mix tomatoes (with liquid) and the remaining ingred. except rice, corn and beans; pour over chicken. Cover and cook in 350' oven 30 minutes. Stir in rice, corn (with liquid) and bean (with liquid). Cover and cook until chicken is done and rice is tender, 30-40 minutes. Serve with tortilla chips if desired.
