Iced Molasses Cookies 3c flour 1 1/2t ginger 1 1/2t cinnamon 1t b. powder 1t b. soda 1/8t salt 1/3c veg. oil 1T unsalted butter, softened 1/2c firmly packed brown sugar 1l egg white 1/3c light corn syrup 1/3c lite molasses 1t vanilla extract 1/2t lemon peel Icing: 1c sifted confectioners sugar 2-3t 1% milk 1/4t vanilla extract Combine flour, ginger, cinnamon, b. powder, b. soda and salt. Beat oil, butter, b. sugar till well blended. Add egg white, corn syrup, molasses, vanilla, lemon peel beat till smooth stir in dry ingredients. Divided dough in 1/2. Roll to 3/16" thick between 2 sheets of wax paper. Repeat with remaining dough. Slide dough on cookie sheet and freeze for 1 hour. Preheat oven 350x, Cut 2 1/2" circles arrange 1 1/2" apart on cookie sheets. Bake 6-8 minutes, till edges are brown. Cool on cookie sheet 1 minutes, transfer to wire rack.
