I did archeology at university and when excavating the 500 + year old
middens we'd frequently unearth corncobs still intact (without the seeds). I
was amazed.

I have had a half coconut shell variously in the compost heap or buried
in the garden for about 30 years. Even in this environment, where the
half-life of most organic matter is brief, it looked pristine when I last
saw it about 5 years ago. This has led me to wonder why the tropics are not
sky deep in coconut shells. Is there some cold-intolerant fungus that can
live on these in warmer climates ?
