I am biased too. I've heard of one case where a Linux server was up
and running for about a year without a reboot. There are Linux
kernel versions that are considered "production" releases. I was
running kernel 1.2.8 and last upgraded to 1.2.13 both serve me
well. The current "production" kernel is 2.0.27. My PC running
Linux is a stand alone machine.
Perhaps FreeBSD might appeal to you? It's development is slower
though.

Lots of RAM will make the system perform better than lots of speed.
