Date & Orange Loaf 1c chopped, pitted dates 1/2c boiling water 1/2c orange juice 1/3c corn syrup 1T grated orange rind 2 egg whites 2 1/4 c cake and pastry flour 1/3c sugar 1t baking powder 1t baking soda 1/2t salt non stick cooking spray METHOD: In small bowl, combine dates and boiling water; let cool. Add orange juice, corn syrup, orange rind and egg whites. In large bowl combine remaining dry ingredients. Add liquid mixture to dry ingredients, stirring just until moistened. Spread in 9x5" loaf pan sprayed with cooking spray. Bake at 325xF, 55 to 60 minutes or until toothpick comes out clean. Cool on rack 10 minutes; remove from pan and cool completely.
