Hearty Italian Bean Soup 1/4lb cooked ham 2 celery stalks 2 carrots 1 onion 1 zucchini 1-15oz cans white kidney beans 1T olive oil 1/2t dried basil 1/4t pepper 15oz can stewed tomatoes 15oz chicken broth 1/2 medium sized bunch broccoli (remove stems) Cut ham into 1/2" pieces; dice celery, thinly slice carrots, chop onion; dice zucchini. Remove 1+1/2c white kidney beans to medium bowl mash until smooth. In 5qrt dutch oven over med-high heat in hot oil cook ham, celery, carrots, onion, zucchini, basil and pepper until veggies are tender and begin to brown. Stir in stewed tomatoes, chicken broth, chopped spinach, mashed white beans and 2c water; using spoon to break up tomatoes; over high heat heat to boiling. Reduce heat to low; cover and simmer 15 minutes. Stir in remaining beans.
