Hi Holly,

   Check into your Mac's Mail Reader program's settings for a checkbox
stating 'delete mail after retrieval' or something to that effect.
Normally, mail readers will leave everything they find on the server until
specifically told to delete it.  This is a setting you need to make on
your Mac.
