There are many ways to use the wonderful dandelions in our area that grow
healthy and free of chemical contaminants including pesticide/herbicides
and chemical fertilizers containing toxic substances.  They can be added in
any amounts to salad greens, soups, stir-fries, stews, boiled as a
traditional spring vegetable, made into wine, and as a coffee-substitute.

For salad purposes, the choicest dandelions are abundant now in mid-spring,
well-developed, with the bud at the button-stage, just emerging from the
heart of the dandelion.  Cut-off just below ground-level, heart intact, the
root will continue to produce for you.  If you'd rather it not continue to
grow there, harvest the root and use it, too --or replant it somewhere
else!  Leaves still joined at the crown, the dandelion is easiest to clean:
pull off debris and yellowed leaves.  Wash in a basin of clean water and
dry in a towel.

SIMPLE DANDELION SALAD

DANDELIONS  --whatever amount you think you'd like to eat, then double that
amount!
	Slice or chop into ~one-inch pieces, slicing carefully across the
hearts to show
	and preserve their beauty.  Bits of scrubbed root can be chopped
and added
	in.
ONIONS --fresh scallions including greens, or mild red, any amount.
GARLIC --fresh garlic greens if you have  them, but lots of garlic.
DRESSING--
	OLIVE OIL --lots, high quality
	VINEGAR  --a little, high quality-- whatever you like-- balsamic,
organic cider,
		 wine, but not distilled, or lemon juice.
	SALT, PEPPER --to taste
	(MAPLE SYRUP OR HONEY) --a very tiny bit, ~1 tsp for a big bowl,
only if
		 needed --taste it first, without.
	(MUSTARD) --either really good prepared, or powdered,  Not at all
necessary.

This salad is good as left-overs the next day, too, but the colour will be
darker.
